We have a love/hate relationship with carrot cake. There are only so many times you can make it and only so many variations on what shape it takes – be it layers, cupcakes or bundts. But we get endless requests for it and we are only too happy to oblige. So to keep things interesting in the kitchen, we concocted this recipe to add to our ever-expanding carrot repertoire. grated carrots

14–16oz / 400–450g / about 2 cups

dried cranberries

golden raisins

pecans, chopped

unsalted butter, softened

light or dark brown sugar
